Ratio Salted Caramel Milk Chocolate Review: More Cocoa Than Caramel
Salted caramel is one of chocolate’s most familiar flavour pairings, but the balance between sweetness, chocolate and salt can vary dramatically. Ratio Cocoa Roasters pairs 58% dark milk chocolate with crisp salted caramel, promising both texture and richness. We set out to discover whether it delivered a balanced chocolate experience or simply another take on a well-worn combination.

Appearance
The bar is slightly darker than a typical milk chocolate and carries a subtle gloss across the surface. At approximately 5 mm thick, it feels substantial in hand and breaks with a clean, satisfying snap. One side is studded with irregular caramel pieces, while the reverse remains smooth with Ratio’s signature geometric pattern. The packaging reflects Ratio’s handcrafted identity, favouring a simple, small-batch aesthetic over traditional luxury presentation.
Aroma
Cocoa is the first and strongest aroma, giving the bar a noticeably darker character than many milk chocolates. The caramel is subtle at first, becoming more noticeable with time.
Taste & Texture
From the first bite, cocoa takes the lead, giving the bar a more restrained character than many salted caramel chocolates. Sweetness is well controlled, allowing the chocolate to remain the focus instead of being overshadowed by confectionery flavours.
The caramel has a light, crisp texture that reminded us of honeycomb, adding satisfying crunch without becoming overly hard. As the chocolate melts, the caramel becomes more noticeable, contributing a balanced sweetness while the salt gradually builds through the finish rather than dominating the flavour profile.
Despite the generous amount of caramel throughout the bar, cocoa remains the foundation, creating an eating experience that feels measured instead of overly indulgent.
Aftertaste & Finish
The finish is clean: cocoa and a gentle savoury salt linger, while the caramel fades sooner. Rather than leaving a sugary aftertaste, the bar finishes with enough restraint to encourage another piece.
ATC Verdict: Is It Worth the Splurge?
Yes. Ratio takes one of chocolate’s most familiar flavour combinations and approaches it with considerably more restraint than many of its competitors.
By allowing the cocoa to remain the foundation while the caramel contributes texture and the salt builds gradually through the finish, it delivers a bar that feels balanced without sacrificing enjoyment. It stands apart not by reinventing salted caramel, but by letting the chocolate remain the hero.
It quickly became one of those bars we found ourselves finishing faster than expected.
A salted caramel that lets the chocolate lead.
Editor’s Note
This review reflects multiple tastings over several sessions. We considered not only the flavour and texture, but also how the chocolate, caramel and salt behaved together from the first bite through to the finish before reaching our verdict.
