Jasper + Myrtle Ginger & Coconut Dark Chocolate: When the Idea Leads the Flavour

Jasper + Myrtle Ginger & Coconut 65% dark chocolate bar in packaging on a neutral stone surface.

Ginger and coconut suggest spice, crunch, and contrast. Heat against cream. Sweetness against depth. This bar hints at that interplay but keeps it subdued, allowing the dark base to remain the clear focus.

Made by Jasper + Myrtle, the approach feels measured and deliberate. The real question is whether the pairing ever moves from suggestion to presence.

Appearance

Jasper + Myrtle Ginger & Coconut 65% dark chocolate bar with embossed botanical design on a stone surface.

The bar sits in a deep, even brown with a satin-matte finish. There is no bloom or surface haze. Botanical embossing is neat and controlled, and the segments are clearly defined.

It snaps cleanly with a crisp break, showing careful tempering. In the hand, it feels considered, not decorative.

Aroma

Cocoa leads immediately with a dry, faintly fruity lift. The expected spice and coconut notes are subdued on the nose, offering little advance signal of their presence. Sweetness remains quiet.

The aroma suggests balance, not boldness.

Taste & Texture

Stacked pieces of Jasper + Myrtle Ginger & Coconut 65% dark chocolate showing the interior texture and coconut flecks.

On first melt, the chocolate delivers a composed cocoa profile. It is fragrant and controlled, with bitterness kept in check. The texture is smooth and melts readily.

The ginger appears late. It reads more as a gentle heat that settles at the back of the throat than as a clear spice flavour.

Coconut is subtle. Its contribution feels structural, adding softness and body, but it does not bring obvious sweetness or aromatic lift.

With chewing, the order remains consistent. Cocoa first. Heat second. Texture last.

Aftertaste & Finish

The finish is clean and lightly bitter, fading gradually without turning sharp. The lingering heat is brief and controlled. The overall close is tidy and understated.

It ends neatly, though without strong momentum.

ATC Verdict: Is It Worth the Splurge?

This is a well-made bar built on balanced dark chocolate and steady technique. The difficulty lies in the pairing. The promised flavours never quite step forward, and the experience remains more about structure than expression.

We admired the craftsmanship. We were less convinced by the idea.

Carefully constructed, but emotionally reserved.

Editor’s Note

The Bronze award likely reflects technical control and balance. Those qualities are present here. Whether the flavour combination itself feels compelling will depend on how much subtlety you expect from a ginger and coconut pairing.
