Hunted + Gathered Milk Chocolate + Brown Butter – Smooth Chocolate with Subtle Buttered Edges

Hunted + Gathered Milk Chocolate + Brown Butter 55% Cacao bar on grey marble surface

With “brown butter” in the name, and Pepe Saya’s artisanal butter in the recipe, expectations naturally tilt toward nutty richness and caramel depth. The collaboration promises indulgence, but what arrives is more restrained: a polished milk chocolate that keeps the butter in the background.

Appearance

Hunted + Gathered’s signature minimalist mould, deep brown tone, and clean snap. The bar looks simple yet deliberate, with a soft sheen that hints at creaminess.

Aroma

On the nose it’s rich, direct chocolate. No brown butter notes emerge immediately; no nuttiness, no overt caramel, just cacao — confident and clean.

Taste & Texture

This bar melts fast, even in the hand. On the tongue it’s smooth and velvety, carrying the lush sweetness of milk chocolate with a more grown-up 55% depth. The brown butter doesn’t take centre stage, but its presence is felt in a subtle buttery sweetness and a whisper of salt that rounds out the flavour.

Aftertaste & Finish

The aftertaste is of rich chocolate, smooth and lingering but never forceful. It isn’t a bold or layered finish. Instead, a soft persistence that leaves behind chocolate warmth more than brown butter definition.

ATC Verdict: Is It Worth the Splurge?

This bar is less about butter and more about refinement. Those expecting nutty caramel intensity may find it understated, but for anyone seeking a silky, softly indulgent milk chocolate with a touch of complexity, it works.

A polished chocolate experience — subtle, smooth, and quietly indulgent.

Editor’s Note

We opened this bar during a Friday night movie session, more treat than expectation. Smooth from the first bite, it gave us chocolate richness rather than the brown butter indulgence its name suggested. A quiet pause in the film, a small moment to savour.
