There’s no need for an electric mixer for this recipe, as it can all be done easily by hand. It only takes just over 40 minutes to have around 24 (depending on your scoop size) freshly baked cookies. White chocolate is used here, but if you’re not a fan of white chocolate, you could use milk or even dark chocolate.

  • Self-Raising flour, All-Purpose flour, Baking powder: Self-raising flour contains a leavening agent, whereas all-purpose flour doesn’t. Adding the Baking powder also helps keep the cookies light and chewy. We found the combination is just the right balance for this recipe. 
  • Butter: Use good quality unsalted butter; you can melt the butter in the microwave or a saucepan.
  • Brown sugar: This adds depth of flavor to the cookies.
  • Superfine sugar: Aka caster sugar. You can also use granulated sugar if need be.
  • Egg: Use a large size, room-temperature egg.
  • Vanilla extract: You don’t need vanilla pods for this recipe but avoid vanilla essence.
  • Raw macadamia nuts: Make sure these are unsalted!
  • White chocolate chips: Use good quality chocolate. Feel free to substitute with milk or dark; you can even use a combination.

  • 4.4 oz self-raising flour
  • 3.3 oz all-purpose flour
  • 1 tsp baking powder
  • 4.4 oz unsalted butter melted
  • 7 oz brown sugar packed
  • 2 oz superfine sugar
  • 1 egg room temperature
  • 1 tsp vanilla extract
  • 3.5 oz raw macadamia nuts crushed
  • 3.5 oz white chocolate chips

Instructions

  • Preheat oven: Adjust an oven rack to the center of the oven and heat to 320°F (160°C). Prepare a cookies sheet or line a baking tray with parchment paper while you wait.
  • Mix: butter, brown sugar, superfine sugar, egg, and vanilla extract in a large mixing bowl, and whisk well until combined.
  • Using a sieve: Sift in self-raising and all-purpose flour with baking powder, then stir through with a spatula.
  • Nuts and chocolate: Add crushed macadamia nuts and white chocolate chips, and continue to mix until combined without over-mixing. The dough should be slightly soft and sticky with some dry crumbs.
  • Scoop and roll: each cookie dough into a ball. Then slightly flatten each ball and place it onto a cookies sheet or baking tray, leaving space between them.
  • Bake: In a pre-heated oven, bake one tray at a time for 12-14 minutes.
