Peanut Butter Cookies

Deliciously nutty with a soft centre, Peanut Butter Cookies are full of flavour and perfect with a cup of coffee.

Ingredients

Cookies
5.2 oz (150g / 1 Cup) All-Purpose flour
2.6 oz (75g / 1/2 Cup) Self-Raising flour
3 oz (90g / 1 Cup) Rolled oats
4 oz (125g) Unsalted butter, room temperature
3.8 oz (110g / 1/2 Cup) Superfine sugar
4 oz (120g / 1/3 Cup) Honey
2 Tbsp Peanut butter
5.2 oz (150g / 1 Cup) Crushed unsalted peanuts

Topping
4 oz (120g / 3/4 Cup) Icing sugar
3/4 oz (25g) Unsalted butter, room temperature
1 Tbsp warm water

How To Make Peanut Butter Cookies

Pre-heat oven at 350 F (180C).

Line a baking tray with parchment paper or if you have one, use a nonstick baking tray.

Add butter, sugar, honey and peanut butter into a saucepan over low heat, mix well until all melted and leave to cool slightly.

Sift both flours, mix in rolled oats and make a well in the middle.

Pour the butter mixture into the well of dry ingredients.

Mix well with a spatula, cookie dough will look wet and glossy but will not stick to your hands.

Mix the Topping ingredients in a small mixing bowl.

Add crushed peanuts onto a plate and place next to the topping bowl.

Scoop the cookie dough and roll into a ball.

Dip the cookie ball into the Topping mixture, press the wet side onto the crushed peanuts, then lay the cookies with the peanuts side up on the baking tray.

Bake for 10-12 minutes.

Leave the cookies to cool down in the baking tray for 5 minutes before removing from the baking tray onto the rack.

Allow to cool down completely before serving.
