Fortune Cookies

These Fortune Cookies taste just like they do from a Chinese restaurant, except you get the fun of customizing the messages inside. Well worth the effort for a special treat.

Fortune Cookies Recipe

Ingredients

3 Egg whites from large fresh eggs, room temperature
2 oz (60g / 1/2 Cup) Pure icing sugar, sifted
1.5 oz (45g) Unsalted butter, melted
2 oz (60g / 1/2 Cup) All-Purpose flour, sifted

How To Make Fortune Cookies

Print and cut out some fun fortune quotes / messages into 1/2” x 2.5” (1 x 7cm) strips.

Pre-heat oven at 375 F (190C).

Prepare a cookie sheet or line a baking tray with parchment paper.

Have a mug or a bowl ready to help forming shape of the cookies. Also, a muffin pan to help hold the cookies in shape.

Whisk egg whites until frothy using an electric hand mixer at medium to high speed.

Add icing sugar and whisk until foamy.

Add melted butter and continue to whisk until combined.

Add sifted flour, whisk until all combined and has no more lumps.

Drop and smear the batter very thinly in circular motion onto the baking tray to form a disk at around 3”- 4” (7 – 10cm) in diameter.

Only do 1 – 3 cookies at a time due to time restriction in forming cookies while the batter is still hot.

Bake for 2.5 – 3 minutes, until slightly golden brown around the edges.

Take the baking tray out of the oven and flip the cookies over right away with silicone spatula.

MIND THE HEAT from next step onwards.

Quickly lay the fortune quote/message strip in the middle of the cookie while it is still very warm.

 

Fold the cookie in half, pinch the bottom side edges slightly.

Gently lift the soft and warm semi-circle shaped cookie up by its sides.

Carefully lay the bottom of the semi-circle shaped cookie onto the edge of the mug/bowl, ensure the edge of is at the centre of the cookie for even fold.

Gently press both sides down, bend to form the shape of fortune cookie.

Lift the folded fortune cookie up from the edge of the mug/bowl and lay inside the muffin pan.

Repeat the steps until all batter is gone or until the muffin pan is full.

Turn off the oven.

Put the muffin pan into the warm oven that has just been turned off and leave the cookies in there for 8-10 minutes.

The cookies will get a little more golden and crisp up.

Take the muffin pan out of the oven and leave to cool completely.

The cookies will become crispy after they cool.

Keep in air tight container.
