Chocolate and Cherry Slice
This recipe is fast becoming a favorite here, not just because of how it tastes but for how it can be quickly put together. You can do everything by hand, but a food processor makes life much easier.
This slice is sweet and chewy, with bursts of tart cherry in every bite. We love ours served straight from the fridge and served on its own.

Chocolate and Cherry Slice
Ingredients
Cherry Slice Base:
- 9 oz all-purpose flour
- 2 oz powdered sugar
- 2 unsalted butter cold, cubed
- 2-4 tbsp Icy water
Cherry Slice Topping:
- 2.5 oz unsalted butter melted
- 3 oz superfine sugar
- 3.5 oz raw macadamia nuts roughly crushed
- 7 oz candied cherries
- 1.7 oz rolled oats
- 1.4 oz desiccated coconut
- 1.7 oz cherry jam
Chocolate Drizzle:
- 1.7 oz dark chocolate roughly chopped
- 1 oz unsalted butter
Instructions
Cherry Slice Base:
- Preheat oven: Begin by preheating an oven to 415°F (210°C). Line 7” x 11” (or 8” x 12” for thinner base) baking tray with parchment paper; ensure to have some overhanging to help with removal later.
- Sifting the flour: Using a sieve, sift flour and icing sugar into a mixing bowl, then transfer into a food processor and add the butter cubes.
- Food processor: Process the butter, flour, icing sugar, and butter until the mixture resembles fine crumbs. Add icy water, one tablespoon at a time, and keep pulsing until the dough is about to come together.
- Forming the dough: Press the dough evenly into the lined baking tray using your fingertips and spatula with some flour's help while pressing; the flour helps prevent the dough from sticking to your hands.
- Baking the base: Place the tray into the oven and bake the base for 15 minutes. After 15 minutes, remove from the oven and allow to cool.
Cherry Slice Topping:
- Sugar and melted butter: Using a whisk, blend the melted butter and superfine sugar until a thick, smooth consistency.
- Combine crushed macadamias: Rolled oats and desiccated coconut, then mix using a spatula; once mixed, fold in the candied cherries.
- Topping the slice: Pour the cherry slice topping on top of the base and ensure to distribute evenly by using an offset spatula to level it out.
- Cherry jam: With a spoon, drop small dollops of cherry jam all over. You can put as much or as little as you like in any pattern.
- Final bake: Return to the oven for 15-20 minutes or until golden. Once golden, take it from the oven and allow it to cool completely.
Chocolate Drizzle:
- Melt the chocolate: In a microwave, melt the chocolate and the butter together, then mix well using a spoon, then drizzle over the cooled cherry slice.
- Enjoy at room temperature or keep refrigerated until serving.

- Cherry jam: Use your favorite brand of jam; we used Bonne Maman cherry conserve.
- Dark chocolate: Use one that’s 70% cocoa and roughly chopped.
How to make Chocolate And Cherry Slice
- Using a sieve: Add the flour and icing sugar to the sieve.
- Sift ingredients: Sift the flour and icing sugar into a mixing bowl and check that it is free of lumps.
- Sifted ingredients: Add the butter and sifted ingredients to the processor. Then begin pulsing until the mixture resembles breadcrumbs.
- Add icy water: One tablespoon at a time and keep pulsing until the dough is about to come together.
- Remove from processor: Remove the dough from the processor and place it into the lined tin.
- Press the dough: Evenly into the lined baking tray using your fingertips and hands and a spatula. The base is then placed into the oven for 15 minutes and allowed to cool before using.
- Butter and sugar: Whisk together melted butter and sugar.
- Thicken butter and sugar: Mix until the butter and sugar become smooth and thick (like in the image).
- Topping ingredients: Add crushed macadamia, rolled oats, and desiccated coconut.
- Combine topping ingredients: Mix well using a spatula.
- Add cherries: Place the cherries into the topping ingredients.
- Combine cherries: Mix them into the topping evenly.
- Prepare the base: The base should have been baked for 15 minutes and cooled before this step.
- Topping: Cover the base with the cherry topping using an offset spatula or the back of a spoon to distribute it evenly.
- Cherry Jam: Dollop the cherry jam around the slice; use as much or as little as you like.
- Final bake: return the chocolate and cherry slice to the oven for 15 minutes or until golden.
Chocolate drizzle
- Butter and chocolate: Add the butter and chocolate to a microwavable container.
- Melt: Melt the chocolate and butter in the microwave, stirring occasionally.
- Decorate: With a spoon drizzle the chocolate over the top of the slice.
