A perfect combination of apple, sultanas and oats in this Apple Crumble Slice. Excellent served both warm or cold, it can be had as a dessert or a special lunchbox treat.
Apple Crumble Slice
There’s nothing too difficult about this recipe, you won’t need a stand mixer or electric hand mixer as it can all be done by hand. You will however need to do some cooking on the stove top for cooking down the apple and also combining sugar and butter.

Ingredients for Apple Crumble Slice
- Apples: The choice is really up to you and which apple you prefer cooking with or what you have available. Although our preference is between two types of apples for this recipe;
Granny Smith: The granny smith is tart in flavor that can cut through the sugar, giving a nice balance. They also remain firm after baking.
Pink Lady: The pink lady is sweeter than the granny smith but still has some tartness to cut through the sugar. As with the granny smith, they cope well with baking and remain firm.
- Butter: Unsalted is used in the recipe, don’t use salted butter as a substitute for this recipe.
- Sugar: Granulated sugar is used to sweeten the apples, and brown sugar is used for the base.
- Flour: Both all-purpose or plain flour and self-raising flour for this recipe.
- Salt: Don’t overdo it! There’s only a tiny amount of salt to enhance the flavor of the apples.
- Desiccated coconut: We used the unsweetened variety for the recipe.
- Lemon juice: Not only does it add a bit of zing, but it also keeps the apple from oxidizing and turning that ugly brown color.
How to Make Apple Crumble Slice
- Baking paper: Begin by prepping the tray you will be using.
- Cube apples: Cut the apples into small cubes.
- Cook apples: Add the apple cubes along with the rest of the ingredients for the apple mixture together in a saucepan and cook until soft.
- Sift flour: Sift both flours into a bowl, then add the coconut.
- Add butter and brown sugar: Do this in another saucepan to the softening apples.
- Melt: Over low heat, melt the butter and brown sugar together. Then allow it to cool.
- Mix wet and dry: Once cooled, mix the brown sugar and butter mix to the flour and coconut.
- Stir: With a spatula, stir through until combined. Remember to Reserve 8.8 oz (250g) of the base mixture for the crumble top.
- Form base: Pour the base into the tray and spread it evenly.
- Bake the base: Place into the preheated oven and cook until golden. Allow it to cool completely.
- Add apple: Place the apple onto the center of the base.
- Flatten the apple: Cover the base evenly with the apple.
- Crumble: In the bowl with the reserved 8.8 oz (250g) of the base mixture from earlier. Add the butter, rolled oats, raisins, cinnamon, and nutmeg.
- Combine the crumble: Mix thoroughly using your fingers.
- Cover: Carefully add the crumble topping to the slice, covering the apples evenly.
- Final bake: Return the slice to the oven and bake until golden brown.

Ingredients
Apple Mixture
- 6 apples cut in small cubes
- ¼ cup granulated Sugar
- 1 juice of Lemon
- 1/4 tsp cooking salt
Base & Crumble Topping Mixture
- 10.5 oz unsalted butter
- 6 oz brown sugar, lightly packed
- 5 oz all-purpose flour
- 5 oz self-raising flour
- 5 oz desiccated coconut
- 3.5 oz rolled oats
- 5 oz raisins
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Optional
- 1 tbsp powdered sugar or icing sugar
Instructions
- Preheat: Start off by preheating your oven at 350F (180C).
- Prepare baking tray: Line baking tray 13” x 9.5” (33 x 23cm) with parchment paper, leave some overhanging so it’s easy to lift out later.
Cooking the apple:
- Cube apples: Cut apples into small 1/3” (1cm) cubes.
- Cook the apple: Tip the apples into a saucepan and place on a stove at medium heat. Add the granulated sugar, lemon juice and salt, then stir to mix well and cook for 10 minutes or until the apples are soft, set aside to cool down completely.
Making the base:
- Sift: With a sieve, sift both the all-purpose flour and the self-raising flours into a large mixing bowl, then add desiccated coconut, stir well and set aside.
- Brown sugar: Add 8.8oz (250g) of butter (reserve 1.7 oz (50g) of butter for the topping) and brown sugar into a saucepan over low heat, stir continuously until all combined and sugar is completely melted. Allow to cool.
- Mix wet and dry: Pour the butter and sugar mixture into the bowl with the plain and self-raising flour and mix well to form the base mixture.
- Keep some of the base: Reserve 8.8 oz (250g) of the base mixture for use as the crumble topping later.
Forming the slice:
- Form the base: Spread the rest of the base mixture evenly onto the baking tray.
- Bake and cool: Place the base into the preheated oven for 15 minutes or until slightly golden and allow the base to cool completely (around 30 mins).
- Spreading the apples: Place the cooked apples on top of the base and spread evenly.
Crumble topping:
- Making the crumble topping: Add the reserved base mixture, rest of the butter, rolled oats, raisins, cinnamon and nutmeg, and by using your fingertips rub the mix together to combine.
- Spread the topping: Place the topping all over on top of the apple layer, try to cover it evenly, without bringing any of the apple pieces to the top. And then bake for 35 minutes or until golden.
- Cooling: Once it has browned, allow to cool, then slice into uniform sized pieces and dust with a little powdered sugar.
Nutrition
Can artificial sweetner be used?
Yes and no. For the base (which also gets used as part of the crumble) the use of brown sugar adds almost caramel notes to the flavour and would be sorely missed if replaced with an artificial sweetener.
As for the granulated sugar in the apple mixture, Splenda works just fine, replace Splenda for the granulated sugar at a 1:1 ratio.
What can you have with apple crumble slice?
Trying this recipe on its own is recommended, it really is great without the added extras. If you really want to turn things up, serve with vanilla ice cream or with cold vanilla custard.
